Much easier for on/off comparison at the same volume.
The main advantage of the studio EQ is : the auto gain !
at the right in the channel eq, you have the track fader !
If something is to be modified, it would be an auto gain for the channel eq.

is it really a knob that you mean ? as you talk also of level matching…
if it is the auto gain feature, I vote for
