A Shadow Delay?

I have recorded an acoustic guitar part, just some lead slide playing, a single track against some background sounds. Now I was reading something which said I can actually create a mono delay of the recorded track in Cubase and pan it to the other side and it would replicate a double tracked version of the original lead track, if this try and if so, how do I do I?

You need to do a bit of research coupled with some trial and error. Depending on which version of Cubase you have you may not be able to pan a send effect independently, which is what you need to do to achieve what you are asking.

Set up an insert send with a mono delay. Pan the original track hard left, pan the delay hard right. (if it’s possible in LE)

Alternatively, you could simply copy the original track to a new track then time shift the new track a couple of milliseconds.
