Can I copy and paste an older midi track to an instrumental track where I can assign a VST instrument like Swam and add more expression with the expression pedal of my keyboard revising that midi track live and of course to be recorded?

Of course. Just be aware of the different MIDI recording modes, per default every new MIDI data you’ll record will be put into a separate MIDI part, which is maybe not what you want:
