For the top one, you can enter that in one go through the dynamics popover: simply type “p con malinconia” in there. You can also assign expressive text with the text tool (Shift+X), but I created a custom paragraph style for expressive text with a custom keyboard shortcut (in my case, Shift+E).
Alternatively, if you need an expression mark without a dynamic you can also enter a dynamic with the expression added, and then hide the dynamic in the Properties panel, but I’m personally not too fond of that method because it can mess up alignment (the con malinconia from your example will end up centered under the note rather than left aligned, which you then also have to correct in the Properties).

How does one do that?
Under Library>Paragraph styles, in the bottom left you can choose New. I set up my paragraph style to be equal to the Dynamic text font (which is under Library>Font style), so my expressions will match the ones I added through the dynamics popover. Make sure to hit the star button:
so your paragraph style will be availabe in all newly created projects. You can then name your paragraph style (e.g. “Expression text”), go to Preferences>Key commands, search for that name (it will be under Note input>Create text) and assign a key command.
