Changed my question. Why do we have to go into Engrave mode in order to adjust the curve of a slur? To me that should be a procedure done in Write mode.
Because Write mode simply determines the musical effect of the slur (legato from note to note), whereas Engrave is concerned with the shape on the page.

Write mode adds or deletes stuff. Engrave mode adjusts its position.
