A percentage is shown at bottom left in Engrave mode. each page has a different percentage number - can I alter them to be all the same. I am coming from Finale,

That number shows you how full (vertically) the page is with music! So, you can only change it by changing the amount of music you have on the page.
It doesnāt print ā itās just for your information when doing layout. Itās very useful. It will show you when Doricoās vertical justification settings take effect, for example.
There are also similar percentages for how horizontally full each system is, on the right hand side.
That percentage is an output, not an input. It is a useful guide to how āfullā a page is

Are you saying the actual size of the music itself is larger, or the fullness-indicator value?
What youāre asking is āhow do I fit more music on the pageā?
How much larger? How many bars/systems is it, and how many on the other pages?
You might want to spread all the music across all the pages a bit more evenly with a smaller Note Spacing value (in Layout Options); or reduce the system-to-system gap (also in Layout Options > Vertical Spacing > Ideal Gaps).
