How do I set up a single-line staff where I can put notes not just on the line, but also on the two spaces right above and right below the line? Hopefully there’s a way that doesn’t involve editing the instrument xml as that would not apply to an existing project 
Use Library->Instruments to create a new pitched instrument with 1 staff line.
