How do I assign different instruments to rach track
right know i’ve 8 tracks with kontakt 7 and halion Sonic on all.
how to seperate/route?

Are they all the same VST instance or are there 8 different VSTs? Does each instrument have its own channel number?
Do you have your own Playback Template? I’m guessing so, due to Kontakt.

I’m newbie to DORICO but old FINALE user from 1994
Every instrument looks like the screenshot I’ve uploaded.
If I change anything on any track all tracks are affected.
probably they are not on separate channel
They are on their own channel numbers
In the left zone, you will see two tabs:
VST and MIDI
This lists all the VST instruments used in the project (what your screenshot shows)
Track Inspector
This will show you which of those VSTs and channel number that a selected track is routed to
If you click on the Track Inspector, does each track have identical VST and Channel numbers? (Sorry if you already know this but I thought I should mention it given the screenshot you posted.)
Edit: Also, in the Track Inspector you will see a little e, this will open the VST that the track is routed to
