It depends what you want to hide. If you select an object in Engrave mode and open the lower Properties panel, many objects have a Hide property that you can activate. For rests, there’s Edit > Remove Rests (although note that this will affect spacing).
For objects that can’t be explicitly hidden, you can select the object, toggle on its Color property, and then use the color picker to set its transparency (Mac) or alpha channel (Windows) to 0.
You can set key commands for hiding rests.
