Because you can have a very large number of voices if you wish. Clearly Dorico uses upstem/downstem to simplify it’s layout algorithms.
(I agree it takes a little getting used to - but after a while you forget all about it)

The point for me is that it was not clearly stated, at least where I was looking. On the GUI in write mode, if you have the window less that full screen you can miss it. Yes you might spot it on the caret though, if you know it is the place to look. Same with the delete function for redundant voices - a restart, then there is the confusion of stop and start notes. I refer to these types of issues as bear traps, where one expects transparency and intuitive design, things do noty work without a lot of research. On the whole though Dorico is elegent .

Why does it need to be (more) “clearly stated”? What impediment does it cause?

I have to make the window pretty small for this info to not be visible – at most sizes it’s right there in the status bar.

ask a newbie to delete a redundant voice, ask the why the should elect a note to stop a voice, as opposed to simpli stop inputting notes
