I searched for a way to stop this but didn’t find anything. As soon as a enter a note smaller than a quarter note beams automatically appear and even have stemlets. I like stemlets but would prefer for this not to automatically happen. Is there a way to prevent this?

Sounds like you’ve set your Notation Options to do that.
