Do I really have to change note duration manually for every note I play on the in-app keyboard? Is there no way for the app to just transcribe the length of the notes as I am playing them?

Yes, you can play to a click track in Live Record mode.
I am on an iPad. There is an onscreen keyboard, but I don’t own an external midi. The video covers desktop, and the options available on the iPad don’t match the video.
I’ve been through the iOS/iPad manual and can’t find the phrase “live record”, outside of an oblique reference to using an external keyboard, which I do not have. I’m using the on-screen, in-app keyboard. What am I missing?

You are missing the 2nd prerequisite for recording with an iPad:
As far as I know, an on-screen keyboard isn’t a MIDI input device. It’s a comparable input method to keyboard or mouse etc.
I never use this, but I just gave a try, and apparently it works. Select a spot and press the Rec button. The metronome plays a full bar, then the recording starts. I haven’t changed any option (and I have no idea how staccato/legato etc. are handled on this virtual keyboard!).
Note that you don’t see the notes in real time, but I think it’s expected.

At least they don’t appear until you’re done! If they popped up late while playing something else, it would be distracting.

Yes. So that sounds like a yes, I do need to manually retime every note, even though I am playing them at the duration I actually want.
