I remember experiencing an issue with Cubase’s GUI freezing that was solved with an update. It would seem that it is back in Cubase 11 Pro on the OSX side. I run a 14-core iMac with 64gb of memory. It actually will freeze the whole machine’s GUI but both audio and the mouse can be moved around when it occurs. This does not happen in Pro Tools or Logic Pro X.

When does the GUI freeze?
If you right-click the Cubase icon in the Dock (while Cubase is frozen), can you see the Force Quit option? If yes, can you trigger it? Does Cubase make the *.crash file then? Could you ZIP and share it, please?
Mac: macOS Console utility > User Reports folder or Crash Reports in macOS 10.15 (or ~user/Library/Logs/Diagnostic Reports).
I get exactly the same problem. Whole GUI freezes for a while, but in my case it comes back to normal after a while. It does not happen on Cubase v10.5
