This is very strange, never experienced before and I don´t find any other post reporting this bug:
When changing a track volume by moving the fader after some seconds or when the looped section restarts the volume resets, but it doesn´t happen always.
If the volume value is modified it works fine, also automation works fine. It is something with the faders…

Hmm, it sounds like changing the volume with and without write activated. However, you are surely already aware of that possibility. Are any options in the automation panel dialogue activated by any chance?
I thought I was crazy. 
It happened to me yesterday few times, M2 Ultra, latest Ventura. I had a looped section I was working on as well and typed the new dB value with the keyboard (-6dB). The fader kept returning to the previous value of 0 dB.
I thought I had press something accidentally, but this kept happening for a while.
No automation activated on that channel.

no r/w enable, nothing in Automation panel.
I think I´ve found the problem: a macro knob pointing to track volume in Modulators in the problematic tracks.
Is it something activated by default or that you added? 
In my case I didn’t activate the new modulator function by myself.
I created some basic macro knobs to control volume. Disabling them made the problem disappear up to now.
