Can I split a beam like this?

As you can see this beam is covering the stem of the 8th.

Can I split it to make it look like this?

Split the beam at the E. Select the second beam and add partial beam left property. Select the first beam and add partial beam right property… [pr]

You can split the beam at the Eb, use “Beam Together” for the Eb alone, and “Partial Beam direction” for the two Es:

Or flip the F sharp. It would still be clear.
