I’m sure this is easy to do, but I cannot for the life of me find out how to get this done.
The piece in question (‘Surrey with the fringe on top’ from 'Oklahoma) has a measure with cessura on vocal line and right hand. No cessura on left hand. How to keep the cessura off the left-hand stave?

If you click on the caesura and do not find interesting options in the properties panel but still want something different than what Dorico offers, that would be the way to go…
Yes, you’ll very likely have to input it as a text item. You can copy and paste it from here. Don’t forget to set the character style to ‘Music text’ for this text item.
