Is there any way to tell Dorico to switch patches in Halion Sonic 7, like using a different slot, or change the MIDI channel or something?
Or is the proper way adding a different instrument linked to a different sound?

Sure, you can have both Absolute and Relative Channel changes set up in your expression map.
It’s easy to then create a Playing Technique that will trigger the change. You can also simply use a different voice, and enable Independent Voice Playback too, which will let you independently assign sounds to different voices.

Actually, now that I think about it, in this case this is about live musicians and the playback is just for a demo. So in order for the two keyboardists to know which sounds they need to switch to at any given time, I think I’ll use different “instruments” so that the two players get notified by way of instrument switches what they are supposed to do, and everything gets notated in the score properly.
On the other hand, I could also make switching PT’s looking like “switch to synth bass”, and the like…
So many possibilities…
