How do I slow the tempo marking for playback. Currently it is set to “quarter note = 120”. Nothing I do will allow me to change it so I can hear the music slower.

Click on the quarter note icon and drag up or down to change the value. Click on it to turn it blue, locking playback to thwatevet tempo you have written into the score.
You can also write a different tempo marking in the score. Dorico will follow whatever tempo you write in the score. You can read documentatiom about how to create tempo marks in your project here.
