Is it possible to change the staff size for just a score and just one part in that score? I know how to change it for all parts, but I don’t know how to change it for just one part in the score.

No, not for an individual staff in the score, AFAIK.

Maybe I was a bit unclear. Sorry, I’m still learning. It’s about changing the size of one part within a score. Example: Part 1 - the field size in the page settings - size 3.
In Part 2 - size 6.
If Part 1 & Part 2 are flows, try this: Make a duplicate layout of the part (right side in setup tab). Go into Layout options for the newly created part and change the rastral size. Next, click on flow two at the bottom in the setup tab and de-select the original part from that flow.
When you say “part,” are you speaking of one staff in a full score or the one staff for an instrumental part?
Just to clarify: the size of an individual staff within a (full score) layout can be changed by right clicking as @jesele shows in post #2.
If you are talking about changing the staff size (rastral size) for individual (part) layouts, you can (and should) do this from Layout options. You can select the layouts for which you want to change the staff size in the right-side menu:
An instrumental part, e.g., a trumpet. In this case, I’m referring to the “score.” So, in “flow” 1, it should be size 3, and in “flow” 2, size 6. Within a single “layout.”

View the layout you want to change, navigate to the flow you want to change. Right-click>staff size… and change it to what you want.

You can go in your (Part or Score) Layout, in Engrave mode: at the beginning of the flow that needs a different rastral size then the default one, create a System Break, then with the signpost of the system break selected, choose a different Space Size from the Properties Panel (which will be applied until the end of flow):
