Why is the chord symbol correcting itself to a natural 9, rather than the #9 I put in?
I see how I can edit the chord symbol, but I need a more fundamental understanding of how to correct this behavior going forward.

I guess you have inadvertently made an edit to the default appearance of the “b9” component. Go to Library > Chord Symbols and type this chord symbol into the box in the top left corner. Hopefully you should see the same incorrect “nat9” appearance in the main display. Select the “nat9” component and you should see that the selected item in the row below the main editor has a red flash to indicate that it has been edited. Is that right?
