I really like Organteq by Modartt. It’s a physically modelled church organ VSTi (and standalone application) with many freely customizable stop slots that can be distributed over 3 manuals and the pedalboard. It also provides tremulants, several couplers and many things more. To me, the organ sounds amazing.
Organteq is on the more expensive side, though, but will probably be somewhat discounted around Black Friday.

As far as free alternatives go, there’s GrandOrgue. Some links to sample sets at it’s wiki.
