Is there a way to avoid the collision between the stem and rest (at the attached screenshot)?
A break in the stem at the dynamic symbol is probably not possible?
I can’t think of a good way to accomplish this. You may be able to make that eighth rest into an explicit rest and adjust its voice column; I can’t recall offhand. In general, your options for horizontal shifting of rests is very limited.
You could fake this by placing the offending notes into voice column 1, and then shifting it wayyyy back.
This is one of my few niggles with dorico.
