When I copy one track to another (say flute to clarinet) the copy retains the old track name in the editor’s “part borders” tabs. Is there a way to change this? Thanks!

Double-click to the (clarinet) track name, to rename it. Then hold down Ctrl/Cmd and press Enter. This will rename all the MIDI Parts to the track name.
