My hard drive is filling up with the old Cubase installations as I go along. I would like to know if we can delete old versions of applications (drums, sounds…)?

no problem,
If the new programme works, I delete all the old files, it’s worth cleaning up the hard drive after a long time.

You shouldn’t have multiple old versions of sound packs or drums…only the main Cubase install. The libraries are shared between versions.
You can see what’s installed in Steinberg library manager and remove or move stuff to other drives.
