I want to beam these two stems
I can do it by making the time signature [2+2+1+2]/8, but how do I do it manually? I cannot select only the unbeamed 16th notes (semiquavers); when I try I get this as my selection:
And then “Edit/Beaming/Beam Together” result in this:
How do I beam the two semiquavers manually?

you can obtain this in Engrave mode, where you can select single noteheads of tied notes (with command/control+click to select more than one), and then right click → Beaming → Beam Together:
Sweet. Thanks. I am new to Dorico and still getting use to the Write vs Engrave modes.
If, as in this case, the notes are not tied notes but “regular” notes, selecting, right-clicking and beaming also work in the write window. The only reason why in your example the engrave window has to be used is because the tied notes are not connected with beams within themselves.
This is exactly what OP described himself. But for some reason, he want to do this manually, perhaps because it is one or more isolated cases.

I have expressed myself somewhat awkwardly. I just wanted to use the expressions to differentiate between notes that are tied and those that are not. Quite simple actually, but once again I had to express myself more complexly than necessary because I sometimes have brain farts.
