Is there a setting that will automatically set all accidentals to either sharps or flats in a project? (E.g., I want mine to be flats, but they all enter as sharps so I have to go back and change them.)
There isn’t a seting like this at the input stage, but you can select all, then Filter All Sharp Notes and respell everything at once.

Are you inputting via MIDI into open key? Dorico’s spelling algorithm takes into account the key, so if you are inputting into open key like this …
… you can force flats by using a key signature with several flats, as the notes will not flip enharmonically when you then remove the key sig:
