When I pressed the Del key on the keypad, it used to play from the beginning,

The default action for the Del key is to, well, delete whatever you have selected. If it used to start playback for you then you must have changed that yourself at some point. You can change it in Preferences>Key commands.

SteinbergNoob, remember that you can also press cmd/ctrl-Z which means, you can revert every of your steps one by one.
… unless you have changed that key command to something else, of course.
Regarding your first urgent question, yes you can bind the “start playback” to a key of your choice, as pointed out by @Zalde
