Is there an un-install for Cubase 6 ? If not – how do I un- install it? Does anyone know?

Yes, but you don’t say what platform. If Windows, control panel or the Steinberg folder in the Start-Programs list. You need to manually delete the App Data folder, though.

I’m using a Mac OSX 10.6.8 if that helps.
