I am having formatting issues with the layout of my music which I am trying to get my head around with not much luck which is why I have decided to upload a video of the situation so hopefully someone can help resolve this its ASAP with me.
Is there a settings preference that I am over looking?

dear Amanda, it is not easy to recognise something on your video. There are a lot of flags (system breaks?).
Try to select them one by one and hit backspace (to delete them). The result will be the default formatting, that dorico offers. Only if you are not happy with the result, start changing f.e. staff size in Setup Mode.
You can also filter for system and frame breaks after doing Command-A to select all: choose Edit > Filter > All Breaks, then hit Delete.
