It always runs as HALion sonic SE, but is there a way to make it run as the VST I’m using: Una Corda?

You’ll need to create a Playback template that uses that VST, and set it as your Default.

Every time I load a different score, the default is halion sonic, but I want to change this environment.

You can change the default Playback template in the application Preferences.

If you created a file using Halion, then whenever you open it, it will load those Halion sounds.

However, if you save it with different sounds, either by manually changing the VST/Expression Maps or applying a different Playback Template. Then whenever you open it those sounds will load.
