I don’t know if this is a Dorico, Adobe or iOS issue. I have just changed from running Dorico on Windows 11 to iOS on a Mac Mini. On Windows I could print to a PDF. On the Mac, the print dialog only has my connected printer.
Any ideas?

I don’t have an answer to your actual question, but regardless of your operating system it’s recommended to set destination to Graphics and export to PDF, rather than using a PDF printer. That’ll also probably solve your problem.
The MacOS print dialog should have a PDF button at the bottom, which you can press to save a PDF immediately. Or click on the little arrow for a few other options.
But as Zalde says, Dorico uses its own PDF Export functionality, and doesn’t usually use the OS print dialog.
Thanks everyone. On the print page of the project I found the second Print button in the left pane. Clicking that revealed the PDF button.
As said, you’ll get better results from Dorico using the built-in Graphics Export.
Ray, don’t use that button. You have to use the right panel. At the top switch from Print to Graphic export. Then you have all the options to let Dorico generate PDFs for you. There is a lot to explore.
Remember: don’t use the macOS print dialogue on the bottom left!
