Dorico is available in different Editions, with different Sets of features. So you can start with the free SE edition and later Upgrade to Elements or Pro. Here is a link to a comparison of features.
I believe he is mentioning a mode to further enhance Pro, unless I’m mistaken.
That might be, but splitting one edition into further different modes does not make much sense in my opinion. It just makes it more confusing what is possible and what not.
Can you explain what you mean by this a bit more? Dorico has a lot of automatic/default behaviours, but most things can be altered and changed individually, if you need it.
Most things can, but some cannot, e.g. Ped start and end glyph cannot be moved independently, to mention what I’m working on right now.

Cutaway scores aren’t implemented yet. They will be at some point in the future. I imagine that it would be available in Pro, but not in Elements or SE.
Why would you need an additional “Advanced mode”?
Some users seem to have the idea that the programming team make efforts to limit Dorico’s functionality. The opposite is true. It’s not a matter of removing some guardrails to enable, for example, cutaway scores. Such capabilities have to be designed from the ground up, and then worked into Dorico’s overall design without disturbing any of the existing functionality. I have to imagine this is much easier said than done.
@shaokang_Meng, are you suggesting that Dorico Pro have some sort of simple toggling feature that would reduce the engraving options displayed while working, or something more “structural” that would enable/disable engraving options?
I suppose the former could be handy for workflow (though the development effort might not be worth it when weighed against others).
