Despite having printing set to single side only, Dorico insists on printing double sided.
How do I fix this weirdness please?

Have you checked both printer settings, Dorico’s and your printer’s?

Tried it. Localhost:631 can’t be found on my Mac.
Did you reenable the CUPS web interface by going via the terminal prompt?
Okay, with a bit more investigating and pfaffing about, my Brother printer is printing one-sided only regardless of the settings in Dorico. I was able to get to the CUPS web interface. I think I will continue to follow up with Brother about this, as it shouldn’t be this tricky to do something so routine and simple. Thank you!
CUPS Common Unix Printing System web interface allows you to access the printer settings via a browser.
Your Brother printer will have a tool, an app or driver to access those settings, too.
If the printer has a display, you might be able to access extended settings through the display.
Using the display, you can also print a report page with your printer settings.
I tend to use the system print option in the lower left corner of the Print Mode screen on my Macs. It provides the typical interface that most other Mac-based software uses.
This is possible, though not recommended - for this reason:
macOS-specific print settings are not saved with your project. These must be set each time you want to print, whereas the Dorico print options are always saved with your project.
For the thread openers issue it is necessary to get the printer’s default settings correct(ed).
I don’t have a problem with print settings not being saved for what I do. I can, however, understand how this might affect others’ work.
