Is there a way to select all volume lines in the MIDI List Editor in one move/action and change the volumes of all at once?

Yes.
Select all your CC events in the List Editor.
(You can filter out unwanted events by using the check boxes at the top of the screen.)
With multiple rows of CC events selected, click and drag up/down in the “Data 2” column of a selected row. If you hold Ctrl and click, all values will turn to 0. You can change values in any of the data columns this way.
Hi,
You can select all MIDI Notes and then change the Volume on the right side or in the Info Line. I would say it’s even easier in the Key Editor.
