G’day, I added a bar in the middle of my score, and there’s now in the sax part, an empty bar, no rests or anything. Any idea what’s gone awry?

Turn on Voice Colours and you will see that the Tenor Sax’s notes in section E are in a different voice. Select those notes and change to up-stem Voice 1.

Hi @calumwakeling, adding to the suggestion by @StevenJones01, the missing rests are specifically caused by the End voice property override, that is activated for the blue voice (Up-stem voice 1) at the full bar rest in bar 48 for the T. Sax. (And changing the voice of the E section, as Steven suggested, eliminates the effect of that property override for the subsequent bars):
