Hi! I’m wondering how do I set the distance between staves at, for instance, 10mm all AT ONCE. I’ve been doing this manually one at time but I invest so much time doing it that way.

Doing staff spacing manually sounds very tedious! You can change the layout’s vertical spacing defaults, e.g. by making the minimum gaps between staves larger, or turning off collision avoidance between staves to keep the gaps consistent (as Dorico automatically adds extra space where needed when notes go above/below the staff, or there are dynamics, etc).
