If I select the staccato dot in the left pane, I can keep entering notes and they will all have dots. This does not seem to work with tremolos: I have to enter the note(s) and then go back and turn it/them into tremolos. Is there a trick I don’t know?

I don’t think so. Articulations are basically part of the note in Dorico and so can be selected as part of the input process. Tremolos are repeats and need to be added later, just like ornaments, lines, etc.
