I can find the ‘Open in WaveLab’ menu pick but I can’t find anywhere to set or change the external audio editor to be used.
This was an option previously, right? Can you point me to how I can do this now, please? Thanks.

Closest thing now is the Direct Offline Processor. That only works depending on the app you are trying to go to like iZotope RX. Otherwise, ARA that is now implemented and wait for more and more applications to be able to do their magic inside of Cubase/Nuendo.
