Fix the value of input note

Hi,
Just wondering if I can fix the value of the input note.
Let’s say I am in 3/4 and putting dotted half note then press ESC and when I try to put note again, the value of note resets to half note.

and also can I deactivate the function of stem clicking?
I accidentally click stem so Dorico selects all notes within the same stem.
Can I disable it?

Whenever I misentered a note rhythmically, I just use shift-alt-left/right without needing to leave input mode.
