Having imported a jazz band chart the two Alto sax instruments are sounding like vocals on playback. Also the the instrument definition is wrong. What are the steps to fix these two issues? Would it be best to create new instruments?

First, you can try to reapply the Playback Template:
Second, it can’t hurt to create two new Players with brand new Instruments - I probably would just do this. It’s very easy to copy everything over.
Thank you. I ended up adding new instruments to each of the two players, copying the music over and deleting the original instruments. This worked for the Alto saxes, but when I switched to transposed score, it revealed that the rest of the saxes and the trumpets have wrong (no) transposition definitions.
After XML import, sometimes the instruments are not assigned correctly (the XML didn’t provide enough information. about the instruments used).
Instead of creating new instruments, you could just change them (clicking on the three little dots near the instrument name, in Setup Mode) and choose Change Instrument. And as @DanielMuzMurray suggest is always good to reapply the Playback Template.
