I have 3 pieces in 3 flows, changing the scordatura in the last one also affected the previous!
Can you have another /several scordaturas (TAB) in different flows in dorico?
Only by way of having multiple players, each holding a different guitar instrument with the required string settings, and assigning each guitar player to the required flows. You can assign them all to the same part layout to create the effect of this being the same part too, for example.

You mean the scordatura is linked to the player, not the instrument? Can’t you simply give this player a different guitar?

It’s a setting of the instrument, not the player, yes. You could give one player multiple instruments to hold and just input music on the corresponding instrument’s staff, or you could have a separate player for each scordatura (easier to name them accordingly, perhaps) and then assign them to flows.
You’ll get more or less the same outcome, it’s just a preference of working style. Up to you
