Yes, add a new piano part in that layout. Then you can select a range of notes in multiple staves, copy them, and in the piano part, choose Paste Special–Reduce.
I suppose it’s not completely automatic, but it’s a great way to create piano reductions. You usually need to make some changes to a piano reduction anyways, since it’s sometimes a bit of an art.

One key tip is to reduce in chunks, doing sections that are in rhythmic unison separately from sections with different rhythms – this allows Dorico to consolidate music with the same rhythm into the same voice.
Yes, a warning though, as Dan said, that the piano part will require a lot of voice manipulation before it looks idiomatic.
