maybe this is a stupid question, but i don’t get it. How can i delete the “Flow 1” Headers in the Full Score? Shouldn’t it be hidden by this settings in Layout options?

That setting only controls whether flow headings appear in the layout. To remove the flow title at the top of the page, you need to edit the master page.
Alternatively, if you want to keep the header but have it show the project title, either edit the master page so it contains the project title token (rather than the flow title), or copy the info from the project to the flow in the Project Info dialog (so the flow title is the same as the project title).
