I just switched to Dorico from Sibelius and I couldn’t be happier.
When I have Chord symbols in large orchestral score, what do I do to NOT see all the gren chord-flags in all parts in engraving mode?

Those are Signposts. You can simply uncheck Chord Symbols to suppress the display of those:
The “Hide Signposts” keycommand is really misnamed. It actually functions as “Toggle Signpost Visibility” so you may want to set up a keycommand for it too, as I find that I use that one all the time.
