EDIT: here a much faster method (the unnecessary method using sketch instruments is below the video).
You need to create to identical instruments to be able to visualise the label in the middle. Create 2 Sopranos, and then in the lower staff change manually the clef to bass clef in Write mode (be aware that the note ranges of the lower staff, remain the ones of the Soprano, so don’t be bothered by the red out of range notes: you can switch the visualisation of out of range notes in menu View/Note and rest Colors):

EDIT: this below was a unnecessary complicated method that uses unnecessary sketch instruments rename (click to expand)
I was able to obtain this as follows:
- create two section players holding sketch treble staff
- rename both instrument to Choir and Ch. (long and short name)
- set the Engraving options to show the label centered on identical instruments
- change manually the lower staff clef to bass clef in write mode
- edit the instrument definition in Setup mode to be Vocal staff (changing one of them applies to both, since they are both “sketch/treble staff”
