Help me understand adding and assigning VST instruments - particularly for chord symbol playback

Hi All,

I am having a hard time figuring out VST instruments. Right now, I would like to replace the stock piano sound assigned to chord symbol playback with an organ from Kontakt. I am pretty much looking for a step by step instruction set, so may be best to point me towards the section in the user manual that covers this? I don’t see well enough to follow along on video demonstrations, so text is better for me.
