For some reason the EQ settings suddenly became spaced out in a way that now makes it impossible for me to edit my 4th EQ, and I can’t seem to figure out how to undo this change. Does anyone have any idea what’s going on?

This is an known and manytimes discussed issue here.
When the Channel Settings window is open, click to Window > Windows. Select the Channel Settings Window from the list and click to Reset Layout. The window closes. Once you reopen it, it should looks OK.
