For anyone interested I’ve found one and a half out of three solutions in Engraving Options by immersing myself for a while.
(1) C5 is under Engraving Options > Chord Symbols > Intervals > Appearance of open fifth:
I had only noticed the omit options section three screenfuls further down under Alterations that are for tweaking the version of Omit that you prefer once it’s chosen. Dorico’s default is to give you C(omit3) even if you type in C5, so finding a lot of Omit options led me to think that that is where I would find the C5 option - but not so.
(2) I can still only get Csus2sus4 rather than being able to have the 4 and 2 stacked vertically, so it looks like this is now a Feature Request.
(3) Using other Engraving Options I’m halfway there with Cmadd. I think I have to have two add lines, and I (understandably) have to have 11 above 9 (I’m in the key of C minor):
I’m less of a beginner than I was in this area!

I feel like I used to have a Csus2/4 chord symbol but when I go to Project Default Chord Symbol Appearance, all I see is:
(Cs24 in the left column was already there)

Yeah, that’s not a supported symbol unfortunately. If it’s in the left column here, then it’s a custom symbol that you created it yourself.
I don’t know the meaning of this notation, does it matters if 9 or 11 has the upperhand?

Thanks, @TonH . This is where I went to get the result I’ve ended up with, but with the word “add” explicit, since I find that helps. I’m OK with the 11 above the 9.
