Has the hidden stem property been somehow accidentally removed from the properties panel in the latest release of 4.1? My Hide Stems macro is no longer working, so it seems like the property is missing.

It’s there, just bumped further to the right in the lower panel, at the start of a new column.
Are you in Engrave view when you open the Properties panel?
