How can I hide the rests shown here in orange?
They occur automatically when I place the C and the D to the 2nd voice so that the necks are shown downwards and the 8th notes in the 1st voice are shown as they are in the attached picture.
In principle, the same applies to the bass.
The solution is: mark the area where there are too many pauses (due to the use of several voices), then select ‘Remove pauses’ in the ‘Edit’ menu and …poof… the pauses are gone

Not to belabor the point, but you marked your own answer as the solution to this issue. You should click where it says “Solution” under your post, to unmark it, and then click “Solution” under Musicombo’s post, since he provided the solution.
I agree, the older one gets, the harder it is to remember custom shortcuts (I too am 65).
My approach was to learn where things were in Dorico’s panels and menus before even thinking about shortcuts. Now, after a few years, I still have very few custom shortcuts, as I find the Dorico default shortcuts to be very logical.
However, Remove restsis one that I customised, because I use it a lot. The only others I consider essential are those to change the rhythmic grid, some for beaming - but they all just suit my personal workflow. Doubtless you will find your own.
